I'm so bored of our food at the moment.

Has anyone got any easy recipes that get a big 'Yes!' when you're asked 'Whats for tea mum?'

I'm not the best cook in the world so please take that into consideration with any suggestions! Smile

I also have to cater for veg and non veg at every meal too

roast chicken!

has the advantage of being dead easy (roast-a-bags from lakeland) and generating tasty leftovers for sandwiches etc

Corned beef hash and chicken casserole for my meat-eaters. I don't usually make the same meal for veggie and non-veggie; the meat eaters get meaty stuff and a separate meal for me. If we eat the same, recipes that everyone enjoys are things like stuffed mushrooms, homity pie, cheese and potato pie, and veg risotto.

Feistybird, the simplest way is just to boil and mash some potatoes, stir in grated cheese, stick it in a dish with more grated cheese on top, then bung in the oven for 20 minutes. You can jazz it up a bit with a layer of leeks in the middle as well, and if you use something like Gruyere cheese it perks the taste up a bit as well.

Dh likes it done with layered potatoes - parboil and slice them, then layer them with Gruyere cheese, top with Cheddar and oven for 20 minutes.

OMG cheese and potato pie - we had it at primary school. It had a shortcrust pastry base and sides too and singed cheese on top. Drool.:)

Roast chicken at LEAST once a week - very easy. Sometimes make risotto with left overs - N slaters one with creme fraiche v easy and gorgoeous even tho I have to FORCE kids to eat it.

Kids make own pizza which usually goes down well.

Thanks for all your ideas. Quite a few of them we already have, roast chicken, pasta, spag bol, stews, enchiladas.

As it seems so popular I'll be trying the pie, never made one before so they'll probably faint!

I think the problem is I'm bored of cooking it as much as them eating it Smile

Cabbage rolls; a bit complicated to give a full recipe, but maybe google it? Basically it's rice, ground meat, onion, mixed with tinned tomato soup and put into rolled up cabbage leaves, simmered in the oven. It's a bit fiddly so I tend to make a big batch and freeze half.

shepherds pie

boil potatoes
boil peas sweetcorn etc
cook mince
fry onions
stick mince and veg incl onions into dish, add thick gravy, bit of salt and pepper, dash of worstershire sauce
mash potatoes with a bit of milk or cream, some butter or mayo and either garlic or some more worstershire sauce.
stick mash ontop of meat, top the lot off with cheese and bung in oven.

tata boats

baking potatoes, cook em, slice em in half and scoon out the potato, leaving a shell. mash potato with veg, or bacon, or chicken or whatever you like, add low fat mayo and mix well. put mixture back in the skins, top with cheese and stck in oven until tops are brown and bubbling! lovely with salad

top tip - hide veg in mash!! cauli is good and my kids like carrot cos it makes the mash orange.
