I'm not the most creative cook
Obviously I do beans and cheese and tuna and corned beef etc
But looking for something a bit more exciting to have with them.
Any ideas?

the absolute best baked potato topping (apart from the beef stew I just defrosted) is plain old cottage cheese with a grind of black pepper. salad on the side.

After you've cooked the jacket potatoes, cut them in half, scoop out the flesh and mix with other ingredients, spoon back into the skins, then put back in the oven for about 20 mins, until they're going brown/cheese is melted.

Finely chopped onion and grated cheese. Serve with baked beans.
Tuna, chopped fresh tomato, top with grated cheese. Serve with salad or peas.
Ham and cheese. + beans or salad.

Regular jacket potatoes are nice with ham and cheese sauce.

ninjasquirrel · 29/01/2013 17:27

Chopped leeks cooked slowly in butter + big pile of cheese. Tis yum.

Harrysmummysarah1 · 29/01/2013 20:25

All these ideas sound lovely.
Also thinking guacamole and cheddar cheese might work well together . If I melt the cheese first then add the guacamole after

A vegan alternative for me is hummus. I usually scoop out potato and mash in some hummus put it back in again, toast the top under the grill and it's yummy :)

I usually put a scoop of Clippy's Apple, Tomato & Roasted Garlic Relish. It tastes absolutely amazing...and works incredibly well with cheese and tuna. Have you heard of it? It's a definite must-try!

YY to hummus, jackets with hummus & grated carrot salad is very good.

Our most common topping is a chilli tahini sauce - blend together either ripe tomatoes or at this time of year a jar of passata plus a couple of cloves of garlic, a slug of olive oil, same of balsamic vinegar, salt, a desert spoonful of light tahini & either some fresh chilli or enough chilli sauce to make it suitably hot.
