Oily tasting muffins?

I made some muffins at the weekend which called for 125ml of vegetable oil. Whilst they tasted OK, you could definitely taste the oil in them. What can I substitute the oil with? Butter? If so, how much butter?

What sort of oil did you use? Some have a stronger taste than others.

What kind of vegetable oil did you use? Some have a stronger flavour than others. Try good quality sunflower oil.

If you'd rather use butter, just substitute mls for gs - so 125ml oil is equal to 125g softened butter. Your muffins won't be so moist though.

I usually use about 90ml of oil in my muffin recipes - from Susan Reimer's Muffins Fast & Fantastic

Is brilliant book with clear explanations and fab recipes. Never had a disaster yet.

It was just the Sainsburys vege oil. Maybe I'll try sunflower oil instead!

I don't really want to buy a book AbuseHamza as all I really want is a basic plain muffin recipe that I can add fruit/chocolate/whatevers to as the mood takes me Smile

If anyone has a tried and tested recipe that I can pinch, I'd be most grateful!
