Gutted to announce a culinary disaster with lemon drizzle cake! Think I firstly used too small a tin, as cake was uncooked in middle after 45mins & drooped when I took it out. Cake was 2 inches high - too deep? What size tin do you use? Also my lemons were big so I think my drizzle icing was too runny - what consistency should this be? Happily the rest of the cake was salvageable & absobloodylutely delicious!

I tend to halve Mars's recipe for a normal sized cake tin, or use a big roasting tin for the full amount. I made the mistake of doing the whole mixture in a big tin before and it too over twice the time to cook. I wrote HALVE THIS in big letters on my recipe since then so I don't forget.

The lemon icing is meant to be runny but if you prick the surface of the cake and also don't mind licking it off the work surface that it runs on to, it's fine Wink

FWIW yesterday's was in a big flattish tin, not a loaf thingy. Cadders, will you please find some lemon drizzle for me ? (low sugar, high on lemon), and pour it my way ?

Cadders, I would dearly love to take you up on your exceptionally kind offer, but I fear my contemplation of an end-to-end bike ride (Lands End to John O'Groats) later this year, allied to my current weight and fitness mean I will have to decline.

I made it in 2 standard loaf tins (one cake to eat, one to freeze :o) I made the icing runny, pricked cakes with a cocktail stick and then poured it over before removing the cake from the tin (which I did some timelater so the icing all soaked in)
