Is it possible to make butternut squash soup in a slow cooker? Can anyone give me any good recipes?

Thanks

Yep...
1 butternut squash peeled and deseeded
2 tbsp olive oil
1 tbsp butter
2 onions, diced
1 garlic clove , thinly sliced
2 mild red chillies, deseeded and finely chopped
1.5 litres hot vegetable stock

crème fraîche to serve with lime juice and fresh coriander

To sweeten the onions sweat them in butter on very low heat in a saucepan about 10-15 mins. Bung it all in the slow cooker and cook on high for an hour or so, then turn it down to low for about 5 hours. Before serving add some crème fraîche mash with potato masher if you want it chunky or whizz in food processor if you want it smooth.

I use the same as jamnan but without the chillies and creme fraiche. Just soften the onions and garlic first, put everything in the slow cooker for about 4 hrs, then decant into a stock pot of equivalent and then blitz.
