Storing beetroot

Got loads in my veg box again this week. Last time we had them I didn't use them quickly enough, so they went all soft and I threw them away.

I am thinking of roasting a couple to have with a feta cheese salad, but there are too many for one meal.

If I roasted all of the beetroot, would some of it be OK stored in the fridge? Or would it be better to cook the rest by boiling them before storing? Or how can I store it raw to avoid it going squidgy?

Can you cook and then freeze? Tbh ours usually end up in a chocolate cake.

Why not pickle them? Then have with stews etc through the year.
