Friend coming for supper, what to cook??

I have a friend coming over tonight. She is an amazing cook.
She has done cookery classes all over the world and when i go over to hers, she has sourced authentic, for example, Vietnamese ingredients, and we eat off Vietnamese flatware. Same if it's an Italian themed meal etc etc.

I have form on bottling out of cooking for her and meeting her in restaurants when it's 'my turn' so to speak.

But I want to cook something simple and tasty for her tonight.

Any suggestions.

I am a bung-it-all-in-a-casserole-or-slow-cooker kind of cook, but i know she hates stew, so that's no good.

She is also a sommelier!

She is not pretentious and I'm not trying to impress her but dont want to shame myself

But it needs to look like I've made an effort as she always goes to soooo much trouble.

How about chicken and chorizo jambalaya, very simple to do and it's really tasty.

mmm, all sound yummy. on the BBC link i found creamy chicken & pumpkin with porcini mushrooms. That looks easy enough.
I have a tiramsu ice-cream leftover from Xmas so we can have that as pudding.

My friend ALWAYS does amuse bouche (sp) when we arrive, but I really can't stretch myself to that some I am going to bung olives in a bowl !

I am vacillating between cooking and booking a restaurant I am such a coward
