Coronation sauce...HELP!!!!!

Does anyone know how to make Coronation spread or where I can buy it?

Heinz used to make this lovely sauce in a jar which they discontinued...typical as it was one of the few things my fussy DS would eat in a sandwich.

He has just started taking lunches to school and other than giving him a "butter" sarnies every day I am taking all the "chunks" out of the Tesco Coronation Sandwich filler.

All help gratefully received!!!

Soulgirl, if that is the sauce that accompanies coronation chicken it is quite involved but a quick sandwich filler along the same lines would I suppose be mayonaise mixed with some mild curry powder (dissolve it in little hot water first) and then some pureed apricot (or apricot jam or mango chutney even) mixed in. Not sure what it tastes like in a sandwich but presumably if you add a little sliced to chicken in as well it would be ok.

Thanks will give that a try. I have looked on some of the recipe websites & it did look a bit involved...specially as he only wants the spread & not the chicken!!

I mkae coronation chicken with onion, curry powder, lemon juice, pickle/chutney, and chicken stock. Boil and reduce it, cool, then add the mayo. My recipe also says single cream but I've never added it.
