Pork Loin.....how to cook please?

Hello. My Mum has given me a slab of pork loin and I don't know how to cook it Blush.

Slow cooker,or roast?

Please help!Grin

I'd roast it. Loin is quite a tender meat so works well cooked relatively quickly at high temperature. Work out the time based on 35 mins per lb. Pat it dry, deeply score the rind, rub in some salt and roast, skin side up, at a high temp (Gas 9) for 25 mins... then reduce the heat to low (Gas 5) and cook for the rest of the time. You should end up with some crispy crackling and juicy meat
