Trying to empty my freezer but its just not happening!

A Pork Belly, Chorizo and butter bean casserole.

Stuck on slowly about 4pm, eaten at 8pm - melt in the mouth and spicy with fresh baked bread

Pear for pudding

Roast pork with wicked crackling, apple sauce, mash, greens, carrots and gravy
Then made pork and pepper stew for the freezer with the leftovers

Really fake ratatouille here too (cabbage, leeks, onions, broccoli tomatoes, pasaata) with roast potatoes, stuffing, grilled pork.

There's heaps of this ratatouille/sauce concoction left over too so it's being mixed with some pasta and cheese for tomorrow's lunchesSmile

Christmas left overs

A baked camembert with mulled cranberries and tortilla chips to dip in it.

Roast ham, with baked potatoes. I had brussell sprouts but dh and dc had baked beans and cranberry sauce.
Apple strudel for dessert.

DCs had a bacon frittata with homemade 'chips' and veg. DH and I had a rather tasty pasta puttanesca. Chocolate brownie cake for pud.

Roast chicken, roast spuds, Yorkshires, broccoli, carrots and gravy. There was going to be apple crumble for afters, but just as I was measuring out DD fell and cut her head on the kitchen step. So we spent 2 hrs in A&E while DH finished off making the roast. Bloody delicious it was too, despite mine and DD's being warmed up once we got back.

I batch cook regularly, so tonight we had beef and oxtail pie (life pre-freezer was beef and oxtail stew Wink) with roast potatoes (again from freezer). Pastry and sweetcorn was also from freezer.

Red thai prawn curry, made with paste out of a jar, coconut milk, frozen veg, prawns and straight to wok noodles. Took about 5 mins to make and was lovely.

I made home made nuggets for the dcs ( really simple, chicken breast, dip in flour and egg, wizz some bread into breadcrumbs with a tiny drop of olive oil) and dp and I had slow cooker Bolognese (also very easy, yin of tomatoes, teaspoon of purer, dash of tabasco). We all had pasta.
