That's all really! Veggie version if possible!

Fry chopped onions in olive oil. Add sliced red peppers. Once they've started to brown a bit add tinned chopped tomatoes. Add seasoning - I like 1tsp sugar, 1tbsp Marigold stock powder, freshly ground black pepper, masses of smoked paprika. I don't like chilli, but now's the time to add it. Sometimes I might add a dash of Tabasco. When it's not-quite-cooked gently break a couple of eggs into it, turn the heat down and cover with a lid. Takes less than 5mins to cook the eggs to just-set whites and lovely runny yokes.

Dh likes stirring in a drained tin of lentils before adding the eggs.

Served with refried beans, lime and yoghurt is nice and some fried tortilla chips too.

Was going to do the retried beans and make some wrap/tortilla too. Yum.
