Spicy chicken soup recipes

To use up leftover chicken and to have a sort of spicy Asian kick to it.
But...without having to buy galangal or however it's spelled. So that it's store cupboard simple.

I am thinking chilli maybe. Ginger. Garlic. What else? And how to do I get that thin but tasty broth?

Do you know the sort of thing I mean Often comes in a big bowl with noodles.

I would start with a good chicken stock, maybe using the carcass if you still have it. Otherwise stock cubes would do. Simmer your broth, add finely chopped ginger, garlic, spring onions, chilli, coriander, cooked chicken pieces, a 'nest' of noodles and a splash of soy sauce. Simples!
