Best homemade marinades?

I want to stop relying on bottles and jars and have a few tasty marinade recipes up my sleeve. We eat mostky chicken and fish, sometimes pork or steak. I especially love anything spicy, sweet/salty or herby.

Any ideas gratefully received!

I do mostly honey and soya marinade for chicken/fish for the kids.

We also do the miso marinade (the one in here) - works for beef and pork. Really tasty.

Or garlic + rosemary + olive oil + lemon juice for lamb steaks.

Can't think of more atm...

anthony warrell t has written great barbecue book with lots of marinades - can be used in cooker as well.

A couple of spoonfuls of yogurt, lemon and some Thai curry paste is great on chicken or beef. We usually use the meat with salad stuff to make a very inauthentic Thai salad.

Also lemon, soy, garlic and ginger is great on salmon.

For stir fries we do chopped ginger, chilli and garlic mixed with 2 tbsp oil, 2 tbsp soy sauce and 1 tbsp honey. Much nicer than a packet sauce!
