Cranberries

I have a glut of cranberries left over from making jewelled mincemeat and cranberry sauce. Does anyone know if homemade cranberry sauce will freeze (well) and if not if I use it (the cranberry sauce) to make cranberry liqueur now will it still be okay to use later on in the year?

I don't want to freeze any more whole cranberries as I have a load in the freezer already.

I freeze my cranberry sauce and it's always been fine.

What does everyone do with their frozen cranberries?

I had loads of fresh left after making stuffing but they were starting to pass their best so I froze them. Any ideas? :)

I make a few jars of this Waitrose Mulled Cranberry Jelly and serve throughout the year with things like baked ham, sausages and duck.

Thanks, Clayhead. I'm thinking of making the cranberry sauce today then (since I'll have the time at home to do it) and I'll divide it up into portions for liqueur, portions for Easter and portions for another turkey meal later in the year.

Sleeptime, I used my frozen ones from last year for jewelled mincemeat and cranberry sauce. But my MiL also bought lots and I hate to see them go to waste but couldn't face freezing any more berries.

White chocolate and cranberry muffins are nice. Just use a basic muffin recipe and stick in some chips or shards of choc and some cranberries.

Make cranberry jam & then use that to make a cranberry Bakewell tart
