How long do you leave beef to breathe?

I don't know what you mean by breathe. Do you mean rest after cooking, or to warm up out of the fridge before cooking?

As long it takes to roast my potatoes, so around forty minutes somewhere warm and hidden from DH

OK, well I think the general rule is to rest a joint for at least 20 minutes, but longer is fine.

I cooked a large joint of beef last week and it took 2hr & 20 mins to cook. 20 mins isn't going to get you anywhereGrin, 20mins per kg may?

I think she's already cooked it, and is talking about resting.

I think that you can leave it for 20 mins minimum. After that it just depends what's convenient in terms of what else is cooking.
