Quick lunch ideas please!

I know ... yet another "help me meal plan" thread, but I'm really stuck in a rut with lunches.

I need quick (i.e. can get together in 15 mins or less) ideas for lunch. We have our main cooked meal in the evenings, so I'm thinking small easy meal. I've fallen into just making sandwiches when I'm pushed for time - which is nice, but not every day. With ds1 I would open a tin of ravioli or macaroni cheese every now and then when I was pushed for time - not ideal, but a good cheat. Ds2 hates tinned food except baked beans so that's out (although baked beans on toast is one lunch we have occasionally!)

I used to do soups - bulk make and freeze for later, but neither of the boys really likes soup and it makes so much mess when they eat it, I've given up on that idea.

So ideas please. My current list includes:

sandwiches (various fillings)
something on toast (cheese, pate, egg, beans, or bananas)
baked potato (although in practise this gets too time consuming on a week day)
pancakes (this is a special weekend lunch from time to time)
crackers, cheese & fruit
toasted teacakes/muffins or similar breaded thing with fruit
omelette (again, tends to be a weekend only lunch)

Any more ideas please? Need to inject a bit more variety - enough to make five weeks worth of plans ;) Argh...

mine liek pitta fillled wiht stuff or wraps

alsow hat abotu cookign pasta in tomato soupt?
stodges it up - used to do this when on hol in self catering

I know it's not bad variety, it just feels so boring (yes, it's probably me that's bored and not ds2!)

The pitta is a great idea as that will give some variety. Will give the pasta in the soup a go too.

french bread pizza slice french bread in half, tomato puree again grated cheese and sprinkle some oregano over the top and place under the grill you can do other toppings like tuna, ham and pineapple. Hot dogs are another favourite we tend to have the vege frankfurters that you boil for 2-3mins and then just fry some onions. Boil some pasta and some frozen peas, sweetcorn and then mix in with a tomatoe pasta sauce (one with vege already in) then sprinkle with grated cheese so it melts or just parmesan.Apart from that we have the same stuff like you soups, sandwiches, scrambled egg etc
