Help! I need something easy, vegetarian and kid friendly to make for lunch tomorrow

I've got some friends coming for lunch tomorrow, a couple and their 4 year old. All veggie, as are me and 5 year old DS.

I'm all cooked out after Christmas and cannot think of what to make. Hmm

Any ideas? Neither child is fussy but I don't want to do something too spicy, or challenging but then I don't want to serve beans on toast either! I'd like something quick and easy so can actually spend time chatting rather than creating.

First thing that sprang to my mind was a pasta with nice tomato sauce. Easy and you can prep sauce in advance.

Also yy to home made pizza, with salad.

Plain good after all the big rich meals.

Veggie skewers with tzatziki (sp?!) and baked potatoes or savoury rice. My DS loves anything that comes on a skewer.

Get a roll of puff pastry and put some veg like peppers, mushrooms, onion on there. Top with mozzarella or goats cheese. (although last time I did it I used Boursin and it was lush) and a drizzle of olive oil and balsamic vinegar. Serve with salad and stuff.

Quesadillas. Dead easy. Tortillas, shredded cheese and some chopped up tomatoes or whatever veg you like. You can put chillies on for the adults.

It's between pasta and tomato sauce with dough balls and salad, or homemade soup with homemade (well, breadmaker made!) bread. That would be a good option actually as I've got a ton of cheese leftover from Christmas so could do a cheeseboard too.

On the subject of leftovers, would it be OK to serve leftover Christmas pud for afters? I found a recipe whereby you blend up vanilla ice cream with Christmas pud and refreeze. Sounds simple and easy but is it a bit cheap to give people leftovers?!
