Perfect steak.

I need help getting it perfect for our Christmas dinner. We have two sirloins one to be done medium/rare and the other medium/well. I have the usual kitchen bits in and just want a yummy, juicy steak with some nice flavour to it that involves minimum pissing about since I'll be 40+5 tomorrow and in pain if I stand too long and neither me or DP have cooked steaks before.

Heston I think flips it every 30secs on a high heat. Baste it in butter towards the end of cooking for a special meal and plenty salt/pepper beforehand. Always struggle to get cooking right, I think if you press on it and its soft like pressing on your cheek = rare, medium is like dimple on your chin and well done like tip of your nose. Never quite get it right though Blush. Love steak though, yum and really easy/quick - what's not to like? Enjoy!

Pinck your themb and first finger together on one hand. With a finger from your oterh hand press the fleshy bit under your thumb - that's how rare steak should feel.

Now do the same with your index finger and thum pinched - that's medium.

Do it again with your ring finger and that is well done.

I would cook in a griddle pan, if you have one.

Rub a little oil into the meat and then put that side down in the pan.

When they are done I'd pour a bit of wine into the pan, it will go all steamy.

Plate up the steak and pour this mixture of juices and wine over.
