Would this work - freezing cooked turkey?

Long story, but basically I want to have lots of cold turkey after Christmas, but we are not eating turkey on Christmas Day. What I would like to do is cook it in the normal way on Sunday, carve it and then freeze it until after Christmas. Would this work or is it a ridiculous idea? Xmas Grin

It would work, but you need to be careful on the timescale with cooking/cooling/freezing. Basically, with any meat, the danger is in the length of time it's in the 'danger zone' i.e. the optimum temperature at which bacteria grows/multiplies to levels where it can make you ill so after cooking, you need to cool it quickly to avoid allowing bacteria to grow/multiply during this time period. Make sure the meat is throughly cooked, cool it quickly and then stick it in bags in the freezer ASAP.

We always freeze our left over turkey and have never had any problems with it at all (and we don't necessaril freeze it straight away, so I am not sure if we have been lucky!). I really enjoy bringing a pack out of the freezer a few weeks' later and using it to make a dinner - I never use it for sandwiches when I have frozen it.

Thanks NUFC69. I've also frozen leftovers in the past and like you, felt nicely satisfied at bringing it out at a later date. I guess what I'm planning to do is only one step away from that - but somehow it feels wrong. Am still not sure whether I really want to do it Xmas Grin
