DS and DDIL are coming for lunch on 23rd, so want to make them a light lunch that doesn't take too much fuss.

We are veggie, so it will be a veggie meal, DDIL has been suffering with gallstones and infection in gall bladder, and has to be careful with her diet - so no cheese, or massive amounts of dairy, - I think a little oil would be OK.

Any suggestions for something reasonably festive, but light?

I'd work lunch around pulses and grains and use the oil sparingly. Peppers, beef tomatoes or flat mushrooms stuffed with cracked wheat/quinoa and vegetables for example. Little bean-burger sliders served with crusty rolls and salad perhaps? Pasta Fagioli maybe? Fat-free plain yoghurt would be a nice addition to a lentil soup, mushroom curry or as a base for a fruit dessert.
