Foolproof coq-au-vin recipe

Does anyone have a foolproof coq-au-vin recipe please? I love the dish, but I've never had great success replicating it myself! Also, can it be done in the slow cooker? Thanks in advance.

I don't follow a recipe and have done in slow cooker. Just chuck in chicken (ideally thighs with bone in) any old cheap/left over red wine, chicken stock, garlic, a bit of flour, mushrooms, and onions (ideally small shallots but they are a bugger to peel). Also thyme, fresh or dried. Serve with green beans and fresh bread. Check an hour before serving and if it's too liquid then take the lid off. If it's still too liquid 20 mins before serving take the inside bit out of slow cooker and put in hot oven with lid off to reduce further. It's not gourmet but very nice!

Forgot bacon - it needs bacon or pancetta. I fry it before putting in slow cooker. Also often add a finely chopped carrot but don't feel it's an essential ingredient if you don't happen to have one.
