Made some rum butter this afternoon and its curdled!!! Does anyone kcnow how to rescue it? Thanks

Add more icing sugar, sieved. Keep adding icing sugar until it's smooth again, then you can risk adding small amounts of rum to increase the flavour :)

Mary Berry made Brandy Butter on the GBBO masterclass last night and was quite specific as to how much alcohol you could actually mix with how much sugar. She said "any more than that and it will curdle". Follow MULTIPOODLES suggestion, but be careful about adding more alcohol.
