Would stilton improve or destroy my pie??

I'm having a crack at chicken and bacon hand raised pies today as I want them to be my Christmas "contribution."

Can anyone tell me whether it would be a bad move to add some crumbled stilton over one of the layers? Flavour-wise I think it would go, but would the texture be unpleasant among the jelly?

Well, I was going to do layers - chicken, bacon, crumbed stilton, bacon, chicken. So only really a hint of stilton.
I really want it to be good. Last year I tried to make profiteroles and they were...less than good. In fact, they were the source of much merriment round the table. Xmas Angry

Good point. This pie is just a trial run so it's only for me and perhaps work people, if it's really good. I will have to think who likes what for the proper ones.

Just to update - I was intending to leave the pies until tomorrow to cut but gave into temptation. The one I've tried is AMAZING. So pleased and will definitely be doing a selection for Christmas eve at the weekend.
