Veggie main for dinner party

I won't have huge amounts of time to make the main, but don't want to dish up something boring!

Any ideas?

Ricotta and spinach cannelloni.

Veggie enchiladas.

Both can be prepared before and popped in the oven to cook while you are drinking wine :)

This turnip and chickpea cobbler can be made in advance and then put together and cooked for 15mins in the oven.

I tend to make curries for dinner parties because they are great made in advance as the flavours develop. Also, they are a perfect veggie choice. I have posted various curries but what about pea paneer and spinach curry
