Rib of Beef - have we gone OTT?

DH was with me at the butchers when we ordered the Rib. We have a total of six for dinner on Christmas Day, two of whom are children (but very greedy so count as adult portion!). DH said "go large", as he would naturally. So I think we have ordered a 3 bone rib which the butcher estimated will weigh 3.5-4 kgs.....

Now thinking about it, that just sounds crazy large to me. I know we can have left overs but TBH I am not so keen on cold rib of beef, it doesn't seem to last well as a left over. I'd rather order something we are going to eat most of and have something else as our cold cut for later or the next day (usually I just roast a chicken at the same time to have lovely cold chicken for sandwiches).

Am I right in thinking we have ordered too much beef!?

I would have done a 2 bone rib to be honest.

Time to have lots of cottage pie and beef stir fry maybe to use up the leftovers???

GEt the butcher to chop one rib off and freeze it?

Freeze it portions and use in sandwiches or reheat on gravy for quick dinners at another time.

What a wonderful meal! I'd freeze the third, butcher will separate. Gosh I'm jealous of that lunch.....
