Make ahead beef gravy for Xmas day?

I have made beef stock for the first time. It did gel but doesn't taste very beefy. I saved juices from roast beef can I make gravy now for xmas day? Should I get a beefier stock first?

Are you eating beef on Xmas day? you can cook the gravy with veg. stock or beef a day or two before and freeze this worked well for us last year. It saves a hell of a lot of stress on the Day Xmas Grin

Yes beef for Xmas, no one really likes turkey in our family.

yes that would be fine as I said. One thing though; DH always overcooks the gravy (leaves it bubbling for hours) and the flavour totally disappears that's why I made it quite quickly with a drop of red wine the week before. It was delicious even after freezing.
