Right so our household income may be slashed in half this week. I have eggs coming out of my ears (we have chickens) and a not particularly egg living family. We cant eat feta and pesto quiche every night. Your egg based meal suggestions here please!!

Frittata, cheat's carbonara (stir eggs through pasta on stove to save oven baking with cream), there's a good middle eastern dish where you cook up spinach and stuff and then put in an oven dish with hollows to bake the eggs in. Um. Google vege and middle eastern dishes for recipes?

SavoyCabbage · 09/12/2012 10:38

French toast
Spaghetti Carbonara
Scotch eggs

Egg curry? Poached eggs and asparagus salad. Of go dessery and make meringues.

I love a fat omlette with lots of potatoes and peas, or courgette fritata which is good hot or cold.

I used to cook onions, peppers and mushrooms in the oven and crack eggs in towards the end (whole, not beaten) and bake the whole lot.

SantaFrontPaws · 09/12/2012 10:42

Could you barter with the eggs? Im sure youre not in central london, or i would definately do it (i love eggs).

MousyMouse · 09/12/2012 10:46

crepes
1cup eggs (about 4)
1cup flour
1cup milk
pinch of salt

fill savoury (beans & cheese, chicken&pesto, tuna mayo&sweetcorn)
or sweet (fruit compott)

LittlemissChristmas · 09/12/2012 10:48

I would be honest with the dcs and explain why your going to be eating so many eggs, you might get less moans.
Pancakes - sweet or savoury
Omelette - various fillings
Scrambled egg- add mushrooms, peppers etc if you have them or cheese or even curry powder etc
Eggy bread
Chips, fried egg and beans
Soufflé
Yorkshire puddings with sausage and mash

Not dinner but carrot cake ( there is a 10 egg recipe out there). You can always make and slice and freeze in slices. Take a slice per child out every evening to put in school lunch

Selks · 09/12/2012 11:10

Kedgeree
Huevos rancheros (yum)
Egg curry (also yum)...eggs also good in biriyani
Piperade

Cook some green lentils until done but not mushy. Fry up some fresh breadcrumbs with lots of garlic & thyme. Hard boil some eggs and chop them.

Mix two thirds of the breadcrumbs in with lentils & season.

Put half the lentils in an ovenproof dish, then the hard boiled eggs, then the rest of the lentils & the reserved third of the breadcrumbs on the top.

About 20mins at 180C.

More yummy than the few ingredients make it sound & you can use a lot of egss this way.

Just saw this Shakshuka on telly. Looks amazing.

HazeltheMcWitch · 09/12/2012 19:15

yes yes to Shaksuka. But I do it veggie style, with no beef (obvs) and no aubergine. So just spicy pepper/tomato sauce with eggs. Delicious, and prob quite cheap too, esp if you go to the market for your veggies?

HazeltheMcWitch · 09/12/2012 19:15

here is Ollolenghi's basic shakshuka recipe.

HazeltheMcWitch · 09/12/2012 19:18

Ollolenghi??? Not sure what's happened to my typing today...

Drladybird · 10/12/2012 08:49

Vegetable noodle soup with egg and coriander
Sweet and Savoury baked custards (Clafoutis)
Eggs baked in the oven, mexican style (sorry don't know the original name perhaps it is what is mentioned above).

Selks · 10/12/2012 13:58

....Not that the Op has been back to see people's suggestions or say thanks.....Hmm

Virgil · 10/12/2012 22:07

Thanks Selks but funnily enough losing my job has rather taken up my time over the past day or so. Sorry if I'm not MNing enough for you though since yesterday.

Hard boiled eggs, cut in half. Put in oven dish, cut side down, and pour over cheese sauce.

Top with grated cheese and sliced tomatoes, and then grill until the cheese is browned.

UptoapointLordCopper · 11/12/2012 07:36

No need to say thank you Virgil. Hope things will get better for you.

MadameCastafiore · 11/12/2012 07:41

Dsil makes something called chook a chek or something. She's Algerian so probably not spelt like that.

You peel peppers and tomatoes and cook with rice and then fold it into raw eggs and scramble. Think you put North African sort of spices in it too.

DH and dd advise me that it is really really nice, DS and I allergic so can't eat it but is handy recipe as cheap and always have the ingredients knocking around.

Selks · 11/12/2012 13:27

Well I didn't know that did I OP, so no need to be rude. My sympathies to you; I'm very sorry to hear that this has happened to you.

KnittyFoxyMa · 11/12/2012 14:15

James Martin uses about 8 eggs in his yorkshires, and that makes them REALLY filling, and so you can minimise the meat. how about filled ones with chopped meat, spuds, onions, veg etc? I used to mix with some tinned condensed mushroom soup. they don't taste more eggy either.
