What can we do with chicken Wellington?

We're having my parents, brother and his DP for dinner Christmas Eve. We are going to have chicken wellington. But we aren't sure what to do with it.

Any ideas?

Individual Chicken Wellington. Cover a chicken breast in pate. Then wrap it in rolled puff pastry. Brush with beaten egg. Bake on greased baking sheet for roughly 45 minutes in an oven of about 200 degrees centigrade.

ME we already have the wellingtons sorted. We need ideas of what to do with it.

Cog No it doesn't. It is Chicken breasts stuffed with sage and onion stuffing, encased in streaky bacon and puff pastry. So no sauce.

DH thought of doing like a potato gratin thing but then we wondered about gravy.

Spinach would be nice- potato might be too heavy.

Something on the side that includes a sauce element would be nice if the chicken is relatively dry. Leeks or Fennel au Gratin. Creamed Spinach. Boulangere Potatoes would be OK in dainty portions. Rather than gravy how about using redcurrant jelly to make a Cumberland Sauce?
