What can I make with some cooked chicken?

I have a whole cooked chicken in the fridge. Need to use it to make something for cooked tea. Any suggestions apart from chicken salad?

Coronation chicken

In a salad with beans and herbs and tomatoes and nice vinaigrette.

As an accompaniment to tabbouleh

a risotto type thing? I remember my mum used to put veg cooked chicken and baked beans in a risotto with grated cheddar on top - was scrumptious! I don't think she used risotto rice just long grain and cokked with stock and other bits.

Or kebabs,wraps etc with chops up bits of salad and veg, you could all sit round and make your own.

We have a recipe chez Badger specially for such occasions, based on Chicken Maryland - it's basically roast chicken bits fried up with some onion, then add a bit of flour, chicken stock, and any leftover gravy and carrots, cook till sloppy, add a handful each of frozen peas and sweetcorn, cook till done.
Serve with refried leftover roast potoatoes, or with mash if ultimate comfort food is required. Not pretty but very, very tasty.

We call it Chicken Dinner, and it habitually appears on Mondays after a weekend roast chicken (as you can tell from the number of leftovers in it...)

I am tempted by all the rice recipes but DD won't eat rice!

WE have pasta/pesto and wraps a lot

you could cook/soak some cous cous in chicken stock and set aside then fry up the chicken with onions, peppers, garlic and a few chillies and then combine with the cous cous - lovely!

risotto,we have this almost every week with leftover chicken and stock from the bones.Nigel Slater's recipe is yummy.
