Fudge disasters

Help i'm trying to make fudge for my DS's Christmas Fayre but the first batch didn't set and this batch burned before it got to soft ball stage on the thermometer.

Some recipes say boil uncovered and don't stir till it gets to 116oC others say stir continuously, i'm using my normal bog standard kitchen pans btw. Oh kind MNetters come and give me words of wisdom on fudge making perfection

I've had great sucess with this recipe

But for a school fayre, I'd go with the non cook ones from Flubba
