home alone.... what to cook?

Need some inspiration for something for me to have for dinner tonight as DH is working.
Got a chicken breast in the fridge.
Am doing slimming world so creamy buttery stuff is out.
Store cupboard is pretty well stocked. Suggestions please!

Stick in foil cover with mushrooms, peppers, onions, grated cheese? and wrap in a slice of bacon if you have any.

Cook in oven or steam.
Serve with rice, pasta or jacket pot.

Or marinate the chicken now in honey, lemon juice and ground ginger.
Either stir fry with beansprouts etc or again serve with salad and rice.

Marinate the chicken in soy sauce, honey and lemon, add salt and pepper. Let it rest while you prepare a salad (add raisins to it if you have them). Grill the chicken, cut it in thin slices and serve on top of the salad.

Have to admit if I am home alone its cheese on toast, or pasta if I can be bothered Grin
