cover in lemon juice (maybe with a bit of olive oil if you can have some fat) and add a little tarragon. wrap in tim foil and stick in the oven for 10-20 mins or so.

Grill and squeeze lemon juice on, fry up a few capers and bung them on the top.

IMO should not eat cod as endangered and tastes of not a lot. Try tuna, trout, salmon etc instead, much nicer plain than cod. Or skate wings. Yum

coddy - any herb or none will do. It's the lemon juice that's really important.

But I think the fried with capers is the best quick method.
