Following on from the cauliflower pizza base thread, tonight I made one with pumpkin and it was brilliant.
Basically all you do is cut the pumpkin flesh into very thin slices, then toss them with 2 Tbsp olive oil and 2 Tbsp flour/I used polenta for crunch, then spread in a 12 inch cake tin.
Spread a little passata/tomato sauce on top.
Bake at Gas 4/180 for 1 hour, then add mozzarella and pop back in the oven til melted.
SO GOOD (and hundreds of variations I'm sure)
