chocolate sponge recipe

has any one got a really easy chocolate sponge recipe for some chocolate cupcakes i want to make.

is it as easy as adding cocco to normal cake mix?

120g plain flour
20g cocoa powder
140g caster sugar
120ml milk
40g butter
1 medium egg
1.5tsp baking powder
Tsp coffee granules dissolved in a tablespoon of hot water.

Cream the butter and sugar, add the whisked egg, add the milk (will be very liquid at this point), sift in the flour/cocoa/baking powder, mix but don't overmix, stir in the coffee. Bake on gas 3 for around 20 minutes, check after 15 in a fan oven.

Makes around 10 cupcakes (5cm cases)

i add cocoa powder to vanilla cup-cake mixture and that works fine. occassionally it needs a little extra milk to make up for extra dryness. i also add choc chips sometimes which the kids love

just weigh the cocoa powder and take away that much flour then it shouldn't affect the dryness :)

victoria sponge is the easiest recipe there is, you just replace 1oz of the flour with cocoa powder

2 eggs
4oz self raising flour
4oz butter/marg
4oz sugar

cream the butter and sugar and then add flour and eggs

cook 375 for about 20 minutes

that makes small amount - 12 fairy cakes (smaller than cupcakes)
to make more just increase by 2 oz so:

3 eggs
6oz flour, sugar and butter

or
4 eggs
8oz flour, sugar and butter (and replace a bit more flour with cocoa

you can add 1 teaspoon baking powder to make them fluffier, or chocolate chips for a nice bits
