Mind you, it keeps for ages as long as you use a clean spoon and don't contaminate it with anything. I have a goose for Christmas dinner every 2-3 years, and keep the fat in the freezer in between.

It came on Tuesday. 2KG and in date until April 2014.

I do 3 roasts a week so it gets used at least twice a week here.

Ooh, good find.

Goose fat lasts forever. I made a goose confit that lasted 18 months. I'm still using up goose fat from the goose I roasted in Christmas 2010. The fat is kept in a parfait jar in the fridge. Perfectly safe, perfectly tasty.

We used goose fat one year, but have since discovered the Joys of Lard!
