Pork Belly - Defrost - cook - refreeze?

Hello
I'm in a spot of bother with a huge slab of pork belly I've defrosted.

I only need it to feed 8, and it would feed 16 (at least!) It's Huuuuuuge...

Can I cut in in half, roast both bits and freeze one half? What would happen with the crackling when I defrosted the second half?

Any help appreciated. I cannot get my head around it

The crackling probablty wouldn't survive, but the rest of would be fine. Reheat it fine a chinesey kind of sauce, lots of five-spice, YUM!
