I usually use braising steak or stewing steak. IIRC stewing steak needs slightly longer than braising.

Don't know what chuck is, is that an american term?

And frying steak is exactly that - for frying - not great quality but good in sandwiches or stirfries

So can you use frying steak in stews?

All the butchers where I live (midlands) sell chuck steak.

Shin of beef is lovely in a stew. It needs long, slow cooking.

I thought shin was a lean cut?
