Traybake with sliced new potatoes, onions wedges, thyme or oregano and stock with white wine? It is the most delicious way to cook potatoes and takes about an hour.

Marinade in a paste - blend garlic, cumin, parsley, mint, lemon - or nearest things available.

Grill and serve with couscous.

Chop potatoes and carrots into chunks, arrange on a baking tray, season, add thyme and drizzle with olive oil. Put chicken thighs on top and scatter about rashers of streaky smoked bacon.

180 degrees for 45 mins (or until the chicken is properly cooked.)

I usually give the carrots a 2 min blast in the microwave first.

Chicken tagine - www.foodforfriendsyeah.co.uk/2011/09/20/moroccan-chicken-tagine/
This is lovely, you can use an ordinary casserole dish if you don't have a tagine.

De-bone, bash a la Jamie Oliver. Dunk in egg then spicy bread crumbs, shallow fry to seal, 30 mins at 180* with parboiled potatoes sliced lengthways. Homemade KFC :o Serve with baked beans and sweetcorn for the full effect.

My fingers wanted me to type beard crumbs, I'm not sure that's so appetising Hmm

coq au vin

button mushrooms
shallots
300ml stock
150ml wine (i add more)
2 bay leaves
cornflour to thicken

I add carrots but not true to recipe

Jamie Oliver style - season and cook on a griddle pan, turning a few times until the skin is nice and crispy, drizzle with a little honey and toasted sesame seeds - yum!

dawntigga · 10/11/2012 08:44

Remove skins and slow cook with preserved lemons, veggies, spices and stock.

I only ever use thighs as they are always on some kind of offer in Waitrose. I use them instead of breasts in every thing.

Have you any chorizo or spicy sausage? Bung in a roasting dish with chunks of chorizo, quartered potatoes, quartered onions and some lemon (preserved if you have it) Sprinkle with some paprika, salt and a little oil. Shove in a reasonably hottish (200 or thereabouts) oven for 25-30 minutes.

Thai red curry, can add chopped orready prepared veg (we use squash)

FreddieMercurysBolero · 16/11/2012 15:42

Slice a lemon, add thyme, roast in oven. Serve with mash, greens and gravy.

Or debone and skin them (really easy, honest! - lots of demo vids on youtube), stuff with cherry tomatoes, mozzeralla and pesto, roll up and bake in oven and serve with pasta and tomato sauce.
