Breakfast hash

Feel like treating DH to a fancy breakfast tomorrow. I remember we had something called this ages ago and it was lovely. With a fried egg on top.

Anyone got any recipes? I googled but nothing seemed quite right. It was spicy if I remember correctly.

Someone recommended this to me, haven't tried it yet. It can be veg or meaty (serve on a bed of bacon).

Turkish Menemen.

Olive oil
1 teaspoon fennel seeds
1 teaspoon cumin seeds
Half teaspoon of mustard seeds
Three quarter teaspoon dried chilli flakes
1 knob of ginger, minced/grated
1 onion, finely diced
2 cloves garlic, crushed
1 large red pepper, diced
Tomatoes, diced
4 large eggs

Heat oil, add fennel, cumin, mustard and chilli flakes. Sauté for two minutes.
Add ginger, onion and garlic, sauté until softened.
Add red pepper and tomatoe. Cover with lid and gently cook for ten minutes.
Check and season, crack eggs on top and let sauce simmer gently until eggs are cooked to your liking.
