How do I serve rice safely?

Having a Bonfire night party with around 40 guests this week and for food was thinking of doing a huge batch of Chilli. Guests can then chose between rice and jacket spuds to go with it.

How do I make sure the rice is safe to eat? Do I cook it just before they arrive and put it in the food warmer?

I have just been on a food hygiene course. Rice is one of the main offenders! Cook immediately before serving and don't leave it lying around at room temperature
