Nice vegetable soup recipes?

Anyone got any nice recipes for (freezable) vegetable soup? Mine always taste of farts. I think it's because I don't really like root veg, except carrots, or tomato based soups.

Leek and potato?

Fluffyfish · 29/10/2012 20:07

Ones with milk not freezable though are they?

I don't put milk in leek and potato soup. Just leeks onions and potato.

Curried parsnip soup is nice too. And tomato, lentil and red pepper.

I've got a recipe for courgette and lemon.

Anyone? Anyone? Bueller? Bueller?

i freeze leek and potato soup ....sometimes i use milk sometimes not.

i like a nice tomato based bean type soup...used to add chopped up frankfurters when teh children were small.

or lentil or lentil and bacon

yellow split pea is also delish with some ham stock

carrot and lentil, or just carrot

butternut squash makes amazing soup!

I tend to avoid anything with cauliflower, broccoli, or leafy veg in....for the "fart" scenario ....mind you lentil can be a bit fart inducing.

My favourites are the classics such as Tomato and Basil (even though tomato is classed as a fruit not a vegetable!) and Carrot and Coriander. In this weather, I add a few chilli flakes for that fiery kick!

Potato and Fennel: Fry one roughly sliced small onion in PROPER butter (for flavour, for 5 mins. Can add some fennel seeds, S & P, bay leaf, celery salt if you like - or not.

Add roughly chopped fennel bulb. Peel and dice 2-3 medium potatoes add to fennel and onion with about 1 1/2 pints of water. Simmer for about 30 mins until potatoes soft. Cool and blend. Lush.

Potatoes can be used to thicken most soups so you don't need milk and they are less calorific.

How about mushroom? This one is delicious - jensfoodandphotos.blogspot.co.uk/2012/10/mushroom-soup.html

What about a bean and vegetable soup? Onions, celery, carrots with garlic and chilli plus kidney beans, chickpeas, chopped toms and tom purée?
