Really fancy some puy lentils....can't think of a nice receipe though. (Don't eat fish) anyone got any nice ideas?

Someone did me a nice feta cheese and red onion and something else with puys which was yum...

Quinoa or couscous. Add chopped tomatoes and drizzle w/vinaigrette. Gorgeous!

do you eat meat??

fry onion, garlic and bacon, season and add some thyme, add lentils and chicken stock to cover, simmer till tender - about 40mins - and then squeeze in some lemon juice and add some choppped mint if you have it.

le Puy lentils go really well in a lasagne - fry onion, garlic, leeks, mushrooms. Cook lentils & add them to the veg with some tinned toms. Then make a cheese sauce & layer up a lasagne. Top with sunflower & pumpkin seeds. Scrummy!

Really delicious cooked in a couple of tins of good tomatoes with fresh chilli to make a thick brothy soup Add a big dollop of sour cream and fresh basil on top

I oven roast veg with olive oil and sprigs of herbs (like rosemary/basil) and serve with puy lentils, a strong sausage (like Toulouse sausage) and a vinaigrette made with the olive oil from roasting and balsamic vinegar.

I use puy lentils in place of soya mince in chilli. Also do the same in a vegi shepherds pie.

  • fry onion, add lentils and sliced carrots, cover with water and season, add thyme and a few chunky smoked sausages, simmer till tender.
  • same thing without the sausage, then let cool and use as a basis for salad with spring onions or chives, raisins, raw carrots. Great with cold cuts.
