Pizza dough recipe, not thin & crispy

While I am waiting for my new bread maker to arrive I'm having one disaster after another with making pizza dough. Normally machine made it rises beautifully, soft and chewy and just yummy. My hand made is thin, doesn't rise and goes crispy in the oven. It tastes OK but I'm rather have it deep and soft! I am using the same recipe as I use with bread maker but it's just not working.

So.. any fail safe recipes & quantities please? thanks :)

err I do it by hand, but don't have propper quantities.

One mug, 2/3 full of milk, warmed in the microwave.
put a load of strong flour in a bowl, add a sachet of fast action yeast, a pinch of salt and a pinch of sugar. Mix in milk. Add more flour til you get a sticky ball. Add a little more flour, and kneed gently til smooth. Cover and leave.
Best bases if you stretch out onto the baking tray (doesn't roll very well) and leave for another 10-15 mins to start rising again.

Quantities do 4 of us, and usually my lunch the next day.
