Chutney - what am I doing wrong?

My apple chutney is nice but always seems to dry out in the jar, is there anything I am doing wrong or I can do differently to stop this happening?

Maybe you are cooking off too much vinegar - chutney thickens on cooling. You have to do the channel test - run a wooden spoon through the chutney to ensure that vinegar does not fill the channel you made with your spoon.
If it does fill the channel, you need to cook it down a bit more but maybe you are overdoing this last stage so that by the time you pot up, it is already on the thick and therefore the dry side. You should also fill right to the top, to minimise evaporation and create a vacuum when you tighten the jar.
