bit boring - left over Spinach

I have loads of left over cooked Spinach.

What could I do with it? Should I just chuck it? Will all the nutrients be gone anyway? (I made it yesterday (steamed it) - it's sitting in the fridge)

Grateful for any suggestions.

as a veggie i make cheese and spinach flan, if push come to shove though you might need to throw as it goes slimey yuk.

Spinach omelette, spinach and ricotta cannelloni, spinach balls (add a bit of nutmeg and cheese, roll into football size, dip in flour, egg and breadcrumbs and fry) freeze it?

mrsvilliers thanks - never heard of spinach balls they sound delicious. Think DD would eat these for supper.

Unfortunately, in Spain, I can't get ricotta would you believe? As Spinach and Ricotta is perfect together.

Herr's the recipe if you want sthg more precise, it's a carluccio one:

500g cooked spinach
2 eggs
Pinch nutmeg
1 tsp pureed garlic (imagine you could omit this or just use a crushed clove)
100g breadcrumbs
50g parmesan (or other cheese would be fine)

Basically mix all the ingredients together, divide into balls and then fry. Yum!
