Roasting chicken with potatoes and vegetables

Have a 2kg chicken and want to serve it with roasted vegetables (courgette, pepper & leek) and roasted baby potatoes. Can I just put them all in the same roasting tray and get the same effect? Will the potatoes go soft and soggy?

Yes, you can - just need to be careful on timings. Given the oil that will be coming off the meat the potatoes should crisp up nicely.

When should I put the potatoes in? The chicken takes around 1hr 45mins to cook.

As long as you've got a big enough roasting tin so that the veggies are spead out in one layer they'll be fine. I'd put them in with an hour to go.

Parboil the potatoes for 5 mins, drain and put in with the chicken with just half an hour to go. When you take the chicken out to rest under a cloth, turn up the oven to a much higher setting... 200C or so... add the vegetables and cook for a further 20-30 minutes. The higher setting will crisp the potatoes and the vegetables will be charred but cooked.
