It's good for cooking dried legumes. I guess that's vegetarian!
Everything turns to mush if you cook for too long. It's not something you turn on and leave on all day while you go out to work (ie 10-12 hour). Have a look at

I found most beans cook in 45min or under, so you need to take them out between 6-8 hour on high, unless you want mush. But mush is good for things like dal and refried beans.
