Esse Range cooking

Whooopppp-whooopp....my Esse range is arriving in jsut over a week. (Think Aga but wayyy cheaper). It is to be the centre of the kitchen. I am sooo excited. So is DH.

But apart from a few times cooking on one when I dated a Yorkshire farmer over a decade ago I am suddenly having a real panic....how much different is it to use....really....what do I need to know. Can anyone recommend any books/range cooking bibles.

Help please.

We got our Aga three years ago and I had never cooked on one before. I used Mary Berry's Aga Cookbook as a guide (which oven, what shelf etc) for a bit til I got used to it. Made sure to scribble on my recipe books when I was baking, what shelf I used and for how long - little tweaks for baking but nothing major. Roasts are yummy! Mine has been turned off since May and will be lit again soon - cant wait!! Enjoy yours!
