The Best Pizza Dough is in Emeril Lagasse's cookbooks.Simply add 1 fat table-
spoon of Basil to this recipe, and use a little Pam on your pizza pan.If using a
pizza stone, like we do...not necessary to Pam it.We do Not recommend that
you Freeze pizza dough;however,it will keep quite well bagged tightly in a large
Ziploc bag in the fridge for maybe 1 day.Jill.

I have frozen pizza dough quite a few times now but it never rises as much as fresh dough- always a bit disappointing.

I shape the dough at cook it for 3 minutes, let it cool and then freeze. You can cook the bases from frozen or defrost them when needed.
