U can't use it to make a cheese sauce can you?! I've got some broccoli desperate to be covered in cheese sauce

You probably could use it in a cheese sauce. I have a three cheese version here www.toddler-recipes.co.uk/quick-macaroni-cheese.html. you could use the ricotta instead of the cream cheese and add a bit more cheddar, parmesan, milk etc. We never have half a pot of ricotta let, too greedy!

Like the sound of that macaroni!! Is it freezable?

Yes it is indeed! Better to defrost and then reheat in a pan rather than from frozen in the microwave and you may need to add a bit of milk when reheating but we freeze it all the time. We like it with great courgette and a bit of nutmeg :-)
